What is the difference between fresh and instant coffee?


There are two main methods of turning fresh coffee into soluable coffee: spray-dried and freeze-dried.

Instant coffee has the roasted/grounded coffee dried either by hot and dry air OR roasted/grounded coffee frozen and the water vaporised. Either method will cause fresh coffee to lose some of its sweetness and aromatic smell.

Of course there are methods to make better instant coffee but it all boils down to cost.

If you want fresh coffee, it is still best to buy coffee seeds and have them grounded to make your own coffee. Processed food will always have something missing from the fresh food.
